New Recipe Alert! Easy Matcha Green Tea Banana Pancakes!
I started hearing about matcha green tea a couple of years ago and I must say, I had heard it was healthy, but I didn’t know the exact health benefits behind this magical green tea powder. It was the newest rave so of course I had to give it a good try – and who wouldn’t love a cute green muffin or colorful latte in a chic tea spot? After trying it and enjoying it, I started looking into various recipes that I can make at home. And let me tell you my friends, the possibilities are endless. Add in its huge health benefits – such as its high concentration of antioxidants (giving us all younger-looking skin), cancer-fighting properties and components that help induce relaxation (here’s looking at you, mommy friends), increase metabolism, burn fat, ability to naturally detoxify the body, among many other benefits – and you have yourself a firm believer in matcha.
Moving on to my delectable Matcha Green Tea Banana Pancakes. Of course I did what every other mom would do and used St. Patrick’s Day as a way to get my children to try my vibrant green hot cakes. They were incredibly quick and easy to make – just the way I like it – and I’m proud to say they were an absolute hit! As if I haven’t given you reason enough to try this recipe, did you know you can freeze and store pancakes for up to two months? Perfect for those meal preps! INGREDIENTS:
1 banana
2 free-range eggs
1 tablespoon matcha powder
Two pinches of baking soda
1/2 cup unsweetened almond milk
Coconut oil
1/2 cup coconut flour
Dash of vanilla extract
Raspberries, nuts and/or any other [healthy] toppings you’d like
Nonfat Greek yogurt (for topping)
Honey
Chia seeds are optional
DIRECTIONS:
- Toss banana, eggs, matcha powder, baking soda, almond milk, coconut flour and dash of vanilla extract in blender and blend until smooth.
- Heat up coconut oil in a skillet on medium-low heat. Pour your batter in the skillet and cook on each side.
- Top with Greek yogurt, raspberries, nuts and drizzle with chia seeds and honey.
